Presto! Pesto Sauce in 1 minute! Well…with the power of video editing it takes a minute…lol. But this seriously easy and delicious sauce only takes about 15 minutes to make and it’s one of my favorites to eat. Here is the recipe I use:
- 2 CUPS FRESH BASIL LEAVES (ABOUT 24 LEAVES PER CUP OR 40 GRAMS)
- 3-4 TSP MINCED GARLIC (1 CLOVE = 1 TSP)
- 1/3 CUP TOASTED PINE NUTS (TOASTED = 5 MIN IN 350°F OVEN AND ALLOW TO COOL)
- 1/2 CUP GRATED PARMESAN CHEESE (SHREDDED WORKS TOO)
- 1/2 CUP EXTRA VIRGIN OLIVE OR AVOCADO OIL
- 1 TBSP LEMON JUICE
- 1 TSP SALT
- 1 TSP PEPPER
ADD ALL THE INGREDIENTS, EXCEPT THE BASIL AND OIL, IN THE FOOD PROCESSOR AND PULSE TO COMBINE.
ADD THE BASIL TO THE PROCESSOR AND BLEND.
WHILE BLENDING THE BASIL, SLOWLY POUR IN THE OIL.
BLEND TO DESIRED CONSISTENCY.
